Is there a quick/one-button way to A/B two tracks? Some way other soloing one track and un-soloing the other?

Would ‘Exclusive Solo’ do what you’re after? Either via “Edit | Preferences | Solo/Mute” (http://manual.ardour.org/preferences-and-session-properties/preferences-dialog/solomute/) or the monitor section.
