Where can I find information on how to use the gain features to control the volume levels of a track and the regions in that track?

There are a few gain stages in ardour.
“region normalization gain” is set to either +0dB or the maximum gain which can be applied to that region so that it doesn’t clip. It can only be controlled via the normalize/denormalize options in the region context menu.
“region gain envelope” is controlled by the regions gain envelope. You can edit the envelope by the gain tool.
“track gain” is the main gain of the track. This affects all regions on the track and can be automated.
